Everything we ship into Idaho travels the same spine: north out of Salt Lake City on I-15, west on I-84 through Snowville, Burley and Twin Falls into the Treasure Valley — roughly 340 miles, about a day of line-haul transit plus terminal handling. Twin Falls, Burley and Jerome are natural mid-route stops; Pocatello and Idaho Falls come off I-15 before the turn; McCall adds Highway 55 and Sun Valley Highway 75, both scheduled with weather buffer November through April.
Because this is an out-of-state job, we plan freight instead of improvising. On larger packages, factory-direct Eagle Group shipment to the jobsite cuts a handling stop and a few days; on mixed packages, consolidating out of Salt Lake City lands the kitchen as one delivery instead of four LTL arrivals.
Before quoting freight we ask: dock or liftgate; alley, street or lot; stairs or ground floor; and what is the narrowest opening the equipment must pass? Downtown Boise is usually liftgate, alley and a narrow door; Meridian and Nampa new-builds usually have a dock. Those answers produce very different freight lines.
Field measure before anything is fabricated
Out-of-state jobs punish surprises: a welded table that will not turn a Boise basement stair becomes a return-freight problem, not a five-minute fix. Send field dimensions plus door and stair widths and we will tell you whether a standard model plus filler works, a knock-down table is right, or SpecFAB should build to size.

Four calendars drive equipment demand in southern Idaho, and ordering against the wrong one is how a project misses.

The costliest mistake here is treating a district or resort install like a restaurant install. A Boise restaurant can absorb a two-week slip; a West Ada kitchen that slips serves August lunch off a temporary line, and a Sun Valley kitchen that slips is closed on opening weekend.
Idaho Plan Review, Permits and Inspections — Factually

Idaho reviews foodservice through regional public health districts rather than one statewide desk. Central District Health covers Ada, Elmore, Boise and Valley counties — Boise, Meridian, Eagle, Kuna, Mountain Home and McCall. Southwest District Health covers Canyon County, so Nampa and Caldwell go there. South Central handles Twin Falls, and Eastern and Southeastern Idaho Public Health cover Idaho Falls and Pocatello. Permits run separately through the city or county, and a hood typically pulls its own mechanical permit.
We do not interpret code and we do not guarantee that any piece of equipment will satisfy a given inspector or jurisdiction. We supply the documentation the review asks for: model numbers, spec sheets, dimensioned drawings, CAD and Revit files where they exist, and written confirmation of third-party sanitation listing status. Those listings are model-specific rather than line-wide, so we confirm each item on your schedule in writing.
Review comments are predictable enough to design out early: hand sink placement and count, a mop basin outside the food zone, drainboard length, indirect drainage at the dish machine, and hood coverage at the ends of the cook line — resolve them before fabrication and before a truck leaves Utah.

Not every Idaho call is about a cook line. The Magic Valley around Twin Falls, Jerome, Burley and Rupert is one of the densest dairy, cheese and potato processing corridors in the country, and those plants buy stainless differently: heavy-duty worktables and stands, sinks, dunnage racks, transport carts and shelving for production, QA lab and cafeteria areas, chosen for wash-down construction and honest capacities.
