Utah County is not one foodservice market — it is four stacked together. Provo Center Street downtown holds a dense restaurant row in older storefronts with small back-of-house and alley loading. Four blocks away, BYU campus dining and the BYU Creamery run institutional volume on an academic calendar. North on Orem State Street and around University Place and Provo Towne Centre, the market is chains, fast-casual and pad sites. At the north end, Lehi and Silicon Slopes tech campuses build corporate cafeterias and floor-by-floor micro-kitchens that look nothing like a restaurant.

Provo and Orem sit roughly 45 minutes south of our Salt Lake City operation, down I-15 through the Point of the Mountain — short enough that Utah County equipment usually moves as a scheduled local delivery instead of sitting on a carrier’s dock waiting for a southbound route. That matters when a GC hands you a two-day window between the flooring crew and the health inspector.
The corridor also lets us stage one southbound run across multiple stops: Lehi, American Fork, Pleasant Grove, Orem, Provo, Springville, Spanish Fork and Payson sit on the same freeway, with Vineyard and Saratoga Springs hanging off it — so multi-site district or franchise deliveries move once instead of on eight freight bills. Sundance and upper Provo Canyon add canyon time and winter weather risk.
Before we quote freight into Utah County we ask: dock or liftgate, alley or street parking, stairs or elevator, and what is the narrowest door the equipment must pass? Downtown Provo answers “liftgate, alley, 32-inch door” often enough that we field measure before ordering anything fabricated. Lehi tech buildings answer “dock, freight elevator, badge access, 6 a.m. window” — easier, but only if booked with building management first.
Field measure before anything gets fabricated
Utah County has two building stocks that fight catalog dimensions: older downtown Provo storefronts where nothing is square, and new-construction shells where the wall has not been framed yet. The expensive mistake is treating a campus or district install like a restaurant install. A BYU or UVU dining hall that slips serves move-in week off a temporary line, and an Alpine or Nebo kitchen that slips runs August lunch out of coolers and folding tables.

Plan Review, Permits and Paperwork — Factually

A Utah County kitchen is reviewed by more than one authority. The Utah County Health Department handles food establishment plan review and inspection for Provo, Orem, Lehi, American Fork, Springville, Spanish Fork, Payson, Vineyard, Saratoga Springs and the rest of the county on its own process and turnaround. Building and mechanical permits are separate and go through the city with jurisdiction, and a ventilation hood typically pulls its own mechanical permit and inspection.
We do not interpret code and we do not guarantee that any piece of equipment will satisfy a particular reviewer. We supply the documentation review asks for: model numbers, specification sheets, dimensioned drawings, CAD and Revit files where they exist, and written confirmation of third-party sanitation listing status. Those listings are model-specific rather than line-wide, so we confirm each item on your schedule in writing.
Plan review comments on Utah Valley kitchens are fairly predictable: hand sink count and placement, a mop basin outside the food zone, drainboard length, indirect drainage at the dish machine, and hood coverage past the ends of the cook line — cheap to fix on the plan, expensive after fabrication.
